Rhubarb. What comes to mind when you hear this word? Perhaps a pie your mother used to make? If you're like me, I think of sweet, sugary desserts. However, did you know that rhubarb is actually packed with vitamin C, an essential for glowing, clear, and healthy skin?
The best news yet is that rhubarb is back in season! Check out mine that I picked up at the store yesterday...

This morning I couldn't wait to get going in the kitchen, knowing that I had this in my fridge. I made some pancakes infused with orange juice, and in the middle I put my delicious strawberry-rhubarb sauce.
HOW TO MAKE THE SAUCE:
- Simmer (on medium heat) fresh cut slices of rhubarb in a dry wine until it's soft (about 10 minutes).
- Add some sliced strawberries, a dash or two of sugar, simmer for an additional 5 minutes and you are set!
- On top, I drizzled a little bit of balsamic glaze. Perfection!
